This picture reflects how I will remember Mark – at the centre of our team. He was a key part of most of our projects and his knowledge and expertise lay behind many of the inventions and innovations that have come out of the broader Ice Cream R&D programme. He was always keen to get involved with project teams and to help out individuals in order to share from his experience – and he always did it in such a warm, gentle way. He loved his work and he loved his microscopy. We will really miss him.
